GS-FOS-6 Position: Cook - Red Seal Occupational Standard (RSOS) or 5+ years of equivalent experience. Leads a group of offenders in the preparation, distribution and service of meals, including religious and restricted diets. Ensures the production of quality meals according to established cycle menu and standardized recipes, in sufficient quantities and on time for scheduled meal period; Methods, techniques and practices used in food handling and storage; Train offenders employed in Food Services; Working knowledge of the properties and usage of kitchen equipment and utensils; Proper and safe lifting methods and techniques to avoid personal injuries; Problem solving and conflict resolution skills; Data entry, manipulation, retrieval techniques and a variety of automated systems and software including: Word, Excel, Outlook, the financial system, Internet Explorer, the Telephone Directory, various Web Sites, etc.
GS-FOS-3: Cooks Helper - Assists in the preparation of ingredients for food production, follows recipes and performs short order cooking techniques; Follows approved preparation and storage procedures to prevent spoilage of perishable food stuffs and cross-contamination; Works with Point of Sale (POS) system and ability to work as cashier at the POS sales register; Safe lifting and carrying techniques to be used when handling food and non-food supplies to prevent injury; Inventory control procedures for stock taking; Safety requirements and hygiene and sanitation practices; Train and observe offenders; Mentally performs mathematical calculations; Use of Word, Excel, Outlook, various Web Sites, etc.
