Plaza Premium Group is proud managing partners with the national flag bearer, Air Canada, and therefore is looking for professional and highly skilled individuals for various FOH & BOH positions for the Air Canada Signature Suite at Vancouver International Airport. In order to serve Air Canada’s super elite, high-profile customers travelling on Air Canada’s Signature Class on select international routes, Plaza Premium Lounge is seeking skilled professionals for both FOH & BOH from, fine-dining, high-end restaurant/hotel backgrounds.

Overall responsibility

Assist Executive Sous Chef to maintain highest professional food quality and sanitation standards. Ensures the highest standards and consistent quality in the daily preparation and keeps up to date with the new products, recipes and preparation techniques.

Key Areas of Duties and Responsibility

· Prepares, pre-cooks, cooks and presents menu items in a timely fashion; following standardized recipes and quality standards

· Assists in menu and recipe creation

· Assists in creating and enforcing SOPs

· Experience in costing and scheduling

· Address general questions from guests regarding menu items

· Maintain inventory levels and recording of end of the month inventory

· Train staff with different kitchen equipments, cooking techniques, and different stations

· Ensures cleanliness and hygiene is maintained and that food products are rotated to ensure high standards of freshness.

· Ensures refrigerators and storage are organized and maintained and that all food products are correctly stored

· Ensure appropriate stock levels are maintained

· Submits food product requirements, equipment maintenance or issues to the Exec. Sous Chef for purchasing or repairs

· Assists coworkers with product receipts, breakdown, storage and rotation

· Liaise and communicates effectively with all appropriate operational departments

· Ensures compliance with licensing laws, health and safety and other statutory regulations

· Performs other duties as assigned or directed.

· Operate and maintain all department equipment and reporting of malfunctioning

Qualities & Requirements

· Valid Food handler certification

· Valid First Aid certification will be an asset

· Strong leadership skills and substantial experience in cooking

· Certification of Culinary training or apprenticeship, Red Seal Certificate is an asset

· Able to butcher and breakdown different types of proteins

· Have good relationship with different local suppliers

· Good organizational and communication skills, including verbal and writing skills

· Passionate about food, current plating trends and techniques in the industry

· Able to communicate in English

· Positive attitude, great initiative, self-motivated and high sense of responsibility

· High level of attention to detail, ability to prioritize and problem solving ability

· Able to work well under pressure while meeting production schedules and timelines for service.

· Must be able to do closing shifts
